Friday Night Drinks









Ok - yes its a little bit early to be posting friday night drinks on a thursday night, but lets call it 'planning'...

Firstly, there is something to be said about an old-school bar at home...our bar consists of a small area next to the toaster so I am pining for a more grown up version like the ones above. With or without a fancy bar area, the cocktail below if the perfect drink to wash away the week's troubles!

Spicy Grapefruit Margarita

Makes 8

Ingredients
250ml of good tequila
100ml of triple sec
1-2 long red chilli's, halved
Crushed Rock salt
6 cups fresh pink grapefruit juice
(or cheats version with the bottled stuff)
Juice from 3 limes


Preparation
Mix tequila, triple sec, and chill's in a large jug. Let it sit for 1 hour, or longer if a spicier tequila is desired. Discard chilli's.
Pour enough salt onto a small plate to cover by 1/4". Run the lime wedges along the rims of eight small tumblers, then into salt to lightly coat; fill with ice. Add grapefruit juice and lime juice to jug with tequila. Fill with ice; stir until cold. Divide drink among glasses.

*Note: The longer the tequila is infused with the chilli's, the hotter it gets...not for the faint hearted!
